Ingredients: 3 cups of Long Grain Rice ( wash and set aside )
3 cups of Water if using Gas stove. Electric stove uses 2 1/2
1 15.5 oz can of Pigeon Peas - Gandules
2 to 3 tsp of Throughmykitchen Sofrito
3 tsp of Olive Oil
1 tsp of Tomato Paste
1 packed of Sazon Goya Seasoning w/annatto
1/4 to 1/2 tsp of Adobo Seasoning Goya ( Add to Taste )
1 tbs of lime juice
Instructions: In a Medium size pot or Caldero add your oil, tomato paste, Throughmykitchen Sofrito, Sazon and Adobo, lime juice over low heat stir and mix until all ingredients are mixed well. Add the water , rice and can of Pigeon Peas beans. With a spoon stir combined ingredients well until all ingredient are mixed well. At this point I would taste the mixture for preferred taste. You may want to add a little more adobo or preferred spices according to your taste. Set your heat on high if using a gas stove , medium to low if using an electric stove. Allow to boil until fluid evaporates totally and you see multi. holes forming , allow the pocket of holes to evaporate. Set heat on low and cover the rice with your lid. Allow to cook for 15 minutes before you give it a nice stir. Cover and cook for an additional 15 minutes before it's complete. Serve and Enjoy
Note you can also using these same step make it in an Instant Pot. Following the Electric stove instructions. The 3 cups of rice to 2 1/2 cups of water.
